We New Zealanders are fortunate in that we all live so close to the sea. Never more than 100 or so km, which means we can catch, prepare and eat our seafood on the same day.
We savour the freshness by not coating seafood with heavy sauces to disguise their unique taste. Our guests complain that we have spoilt them because it will be so difficult for them to re-capture the fresh seafood experience. Seafood dishes in restaurants are never quite the same again.
Guests often ask us for our recipes and we have decided to publish favourites here.
